Vinificazione: Valpolicella Classico Superiore prodotto con la tradizionale tecnica del “Ripasso”. Fermentazione e macerazione dell’uva fresca in Ottobre per 10 giorni circa. Svinatura. Il vino rimane fino a Gennaio/Febbraio in vasche di cemento o acciaio. Successivamente viene fatto rifermentare sulle vinacce dell’Amarone appena svinato, per acquisire più corpo e complessità.

 Affinamento: Maturazione in botti di rovere di Slavonia da 50hl per 12 mesi. Ulteriore evoluzione in bottiglia per 4 mesi.

Weinbereitung: Handlese der reifen Trauben, nach althergebrachter Methode des "Ripasso", Die Gärung und Mazeration der frischen Trauben findet etwa 10 Tage im Oktober statt. Bis Januar/Februar ruht der Wein in Zement -oder Stahltanks, nachdem er umgefüllt wurde wird er auf der Maische des Amarone nochmals zur Gärung gebracht.

Reifung: ca. 12 Monate in 50 hl Eichenfässer aus Slawonien. Anschliessend sind weitere 4 Monate Flaschenreife vorgesehen.

Vinification: Vinification of fresh grapes, followed by a 10 days maceration on the skins. Racking, then the wine remain until February in inox and cement tanks. In February of the following year, the wine referments (“Ripasso technique”) on the fresh pomace left over from the just-completed Recioto and Amarone fermentation.

Ageing: The wine is refined in big oak barrels for 1 years, then is finally refined in bottle for 4 months.

 Gastronomia: Vino bianco secco. Colore giallo paglierino con riflessi verdognoli, assume tonalità più marcate con l’affinamento. Profumo intenso e delicato. Sapore asciutto, armonico, con caratteristico retrogusto di mandorla.

Vinificazione: Dopo la pigiatura si effettua una breve macerazione a freddo per estrarre dolcemente gli aromi varietali tipici della Garganega. La fermentazione avviene dopo la decantazione del mosto a temperatura di 15 gradi.

 Affinamento: Maturazione in Inox e breve affinamento in bottiglia.

 Gastronomia: Colore rosso intenso con riflessi granati. Fine, etereo, fruttato, fragrante. Gusto dolce, vellutato e ricco con note di ciliegia e marasca. Vino da dessert.

 Gradazione: 13% Vol

Vinificazione: Pigiatura soffice delle uve passite in Gennaio; macerazione prolungata per circa 30 giorni con controllo della temperatura. Svinatura del vino ancora dolce con circa 120-130 g/l di zucchero. Raffreddamento e pulizia del vino (travasi) per evitare il proseguimento della fermentazione alcolica.

 Fruttaio: Appassimento da fine settembre per circa 120 giorni, al fine di ottenere una concentrazione ideale.

 Affinamento: Maturazione in acciaio inox a temperatura sotto i 10°C sui propri lieviti per circa 10 mesi. Passaggio di 3 mesi in botte di rovere da 5 hl.

 Gastronomia: Rosso rubino intenso. Al naso si evidenzia un bouquet che ricorda la ciliegia e la marasca, con sentore di piccoli frutti e di speziato. Gusto vellutato, morbido, di gran corpo, persistente.

Selezione delle migliori uve di vigneti collinari posti a 300m di altitudine, nel comune di Fumane. Terreno di tipo calcareo eocenico. Vigne allevate a pergola trentina.

 Gastronomia: Colore rosso rubino carico con venature granate. Profumo etereo, fragrante, speziato, con sentore di ciliegia, mandorla amara e vaniglia. Sapore pieno, caldo, vellutato, morbido, su un fondo piacevolmente amarognolo. Si consiglia di stappare un’ ora prima.
